DMC received a freshly dumped barrel from our friends here in Chicago who produce the herbaceous, wormwood-based digestif, and aged the Salvadoran beans in the barrel for several months to take on the spirit's character that had soaked into the wood.
We also used the Salvadoran beans from the very same lot to cask condition the raw coffee with the unique, and complex Malört liqueur, pressure infusing the beans with the liquid prior to roasting. This is a fun way to try two different expressions of coffee using Chicago's very own Malört
