Kveik Yeast is a traditional Norwegian strain that works well in a wide range of temperatures; a great option when experimenting with yeasts in Guatemala, where it gets very hot during the day and cools off significantly at night!
We sourced a pro-pitch of Kveik yeast from our friends at Omega Yeast here in Chicago. We propped up the yeast prior to adding it to the fermentation tank, strengthening the colony. The freshly picked Catuai cherries are dry pulped, using minimal water to keep as much mucilage on the bean as possible.
These sticky, sweet beans are then added to a fermentation tank with the yeast and left to ferment, allowing the Kveik yeast to eat away at the pulp, producing a unique ester bath for the beans, manipulating the profile of the finished cup!
