This one is for all of the Apéritif lovers out there, starting the evening with an Aperol spritz or a Negroni. Aperol was created in 1919 after years of experimentation- the Barbieri brothers produced this Italian bitter apéritif using gentian, rhubarb, cinchona bark, and bitter orange, along with several other ingredients, a secret recipe. The intense orange-red color, touch of bitterness, and balance of sweetness make this spirit a great fit for spritzes, a cocktail that became popular in the 50's and still has a strong following today! 

We infused the unroasted green coffee with this citrusy spirit to impart the characteristics of Aperol into the finished cup. We selected a natural processed Salvadoran bean from the Pacas Family's crown jewel finca - Santa Petrona. These Bourbon trees range in age, with some up to 85 years old, and still producing beautiful coffee cherries. The natural process makes for a fruitier flavor profile that is juicy and bright - a great pairing for Aperol! During the roasting process, any residual alcohol is roasted off, just leaving behind the complex flavor profile of the spirit.
