Fuego: Catuai Fermented with Mosaic Hops
For this Fuego experiment, we rehydrated Mosaic hop pellets to create a bright, tropical paste of plant matter, layering this into the fermentation take with the freshly pulped Catuai. The cherries were dry pulped, removing only the outer skin of the cherry in order to keep the sweet, sugary mucilage on the bean in tact during the fermentation process. Just enough water was used to cover the beans, keeping a highly hop-concentrated liquid for the coffee to soak in while it is in this porous state.
Mosaic hops have a citrusy, floral profile with some tropical fruit notes as well, all characteristics that pair well with coffee!
